Ingredients:
For theSliders
  • 0.33 cups broccoli (shredded)
  • 0.5 cups carrot (grated)
  • 1 tbsp coconut oil
  • 4 large eggless whole wheat buns
  • 2 cloves garlic
  • 2 cups kidney beans (cooked)
  • 0.5 large large onion
  • 1 cup rice (steamed)
For the Garnish
  • 1 chili (minced)
  • 1 mango
  • 1 cup salad greens
  • 1 cup tomatoes
For the sauce
  • 2 cloves garlic
  • 0.25 cups hummus
  • 1 tbsp lemon juice
  • 3 tsps soy milk
  • 1 tbsp tahini
Directions:
  1. Using a food processor, blend the cooked kidney beans until crumbled.
  2. Add garlic, onion, vegetable stock and steamed rice.
  3. Blend until combined.
  4. Combine with grated carrot and shredded broccoli.
  5. Shape the mixture into patties (3-4 large patties or 7-8 small ones).
  6. Gently heat up some oil on a frying pan.
  7. Cook the patties, 2 at a time until browned.
  8. Drizzle salt and pepper onto the patties.
  9. Gently flip and continue cooking for another 3-4 minutes.
  10. Season with salt and pepper again.
  11. Remove from frying pan and continue cooking the remaining patties the same way.
  12. To serve, cut the whole wheat buns in half.
  13. Layer with salad greens, the patty, lemon garlic sauce, sliced tomatoes, mango and minced chili. Serve immediately.
