Quinoa is one of those superfoods that will never go out of style. Though referred to frequently as a grain, quinoa is actually a seed or “pseudo-cereal” that is cooked and eaten similarly to a grain.

Serves: 1
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 zucchini, chopped
  • 2 cups fresh spinach
  • 1 can diced tomatoes
  • 1 (32-ounce) container vegetable broth
  • 1 can kidney beans, rinsed and drained
  • 2 cups cooked quinoa
  • 1/2 tablespoon thyme
  • sea salt and pepper to taste
  1. Heat oil in a stock-pot over medium heat
  2. Add the onion, garlic and carrots and sauté until onions are translucent
  3. Stir in the zucchini, tomatoes, beans, broth and seasonings
  4. Allow soup to come to a boil, then reduce to a simmer
  5. Simmer for 15 minutes or until vegetables are soft
  6. Add the cooked quinoa and spinach, stirring well
  7. Allow soup to simmer for 5 more minutes
  8. Serve warm
