Ingredients
- 1 small bundle of methi (fenugreek) chopped
- 3 medium sized onions finely chopped
- Oil
- 3-4 crushed garlic cloves
- 1/2 tsp turmeric powder
- 1 tsp sugar
- Coriander for garnish
- 2-3 chopped green chillies
- 1/4 tsp hing (asafoetida)
- Salt according to taste
- Grated coconut
Instructions
- Heat 2 tbsp oil
- Once the oil is hot, add 1/4 tsp asafoetida
- Add 3-4 crushed garlic cloves
- Add 1/2 tsp turmeric powder
- Add 3-4 chopped green chillies
- Add 3 medium sized onions finely chopped
- Mix and sauté everything together
- TIP: To remove the bitterness, pluck the vegetable from the stem, chop it and then wash it in water
- TIP: The addition of coconut and sugar helps get rid off the bitterness in the vegetable
- Once the onions are sautéed, add chopped fenugreek
- Stir well
- Now, add 1 tsp sugar
- Add salt according to taste
- Add 3 tbsp grated coconut
- Mix well
- Ready to serve
