Miniature Quiche are awesome for appetizers, snacks, even meals. You can put what you want in as the filling. Make it with a crust or without. You can freeze and reheat them. They are very versitale for any occasion.

This is a great recipe to have the kids help out with. You can have them make the dough and get the custard mix ready while you start chopping up the ingredients for the filling. Have them help make the dough balls after chilling and press into well greased muffin tins, while you saute up the filling. They can add filling and custard to pastry shells. It’s fun all around.

Ingredients:
Pastry
  • Mushroom Filling
  • 1 8oz bag Sharp Cheddar Cheese
  • 1 cup Butter
  • 1/2 tsp Cayenne Pepper
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1 - 2 TBL Water
Custard Mix
  • 4 Eggs
  • 1 cup Milk
  • 2 TBS Flour
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper
LuvMyRecipe Filling (Our Favorite)
  • half package of Fresh Mushrooms (sliced into pieces)
  • 1/2 Onion (minced)
  • 1 tsp Garlic (minced or chopped)
  • 1 TBS Butter
  • dash of salt and pepper
  • 2 slices Ham (cut into pieces)
  • 4 slices Hard Salami (cut into pieces)
  • 10 pieces pepperoni (cut into pieces)
Mushroom Filling
  • 4 oz can Mushrooms (sliced) or half package of Fresh Mushrooms (sliced)
  • 1/2 Onion (minced)
  • 1 tsp Garlic (minced or chopped)
  • 1 TBS Butter
Denver Filling
  • 1 cup Salami (chopped)
  • 1/2 Onion (minced)
  • 1 TBS Butter
Shrimp and Cheese Filling
  • 1 can Baby Shrimp (drained)
  • 4 oz Crumbled Blue Cheese
  • 1 TBS Butter
  • 1/2 tsp Garlic (minced or chopped)
Directions:
Follow recipe in this order:
  1. Make pastry and chill.
  2. Make custard and put in fridge.
  3. Make filling.
  4. Make pastry balls and press pastry into pans.
  5. Add filling to pastry shells then add custard.
  6. Bake
Pastry
  1. Mix together cheese, butter, cayenne pepper, salt, pepper and garlic powder in a large bowl.
  2. Add flour, mix well then add water 1 TBL at a time until dough is smooth.
  3. Roll into a large ball, wrap and chill for 1 hour or freeze for 30 minutes.
  4. Form into 48 - 1” balls or 24 - 2” balls.
  5. Grease muffin tins. Use butter, cooking spray or oil to grease tins.
  6. Press into greased minature muffin tins or regular muffin tins. **When pressing dough into muffin tins be sure that you get the dough as thin as possible. You may need to make the balls only 1 1/2" for regular muffin tins to get the dough thin.
  7. Place 1/2 tsp (mini) or 1 tsp (muffin tin) filling in center of each, then 1 TBS (mini) or 2 TBS (muffin tin) of custard.
  8. Bake at 400 for 12 – 15 minutes.
  9. Cool 5 min and remove from tins – serve warm.
  10. May be frozen and reheated.
Custard Mix
  1. Use a wisk or fork and mix eggs, milk, flour, salt and pepper together well.

  1. Saute onion and garlic in butter on Medium heat until onions are translucent.
  2. Stir in mushrooms, season lightly with salt, pepper and garlic powder and saute for 2 - 3 more minutes.
  3. Stir in pepperoni, ham and salami and saute for another 2 - 3 minutes.
Mushroom Filling
  1. Saute onion and garlic in butter on Medium heat until onions are translucent.
  2. Stir in mushrooms, season lightly with salt, pepper and garlic powder and saute for 1 -2 more minutes.
Denver Filling
  1. Saute onion in butter on Medium heat until onions are translucent.
  2. Stir in salami and saute for 1 -2 more minutes.
Shrimp and Cheese Filling
  1. Saute garlic in butter on Medium heat for 1-2 minutes.
  2. Stir in baby shrimp and saute for 2 - 3 more minutes.
  3. Remove from heat and let cool for 5 minutes.
  4. Add blue cheese.

Notes:
Make sure dough in pan is very thin. You don't have to make all the fillings... but I do. Make sure you have enough dough to accommodate.
