Parsley Mushrooms Diabetic Friendly Recipe

Ingredients
  • 1 tsp Olive Oil
  • ½ cup chopped onions
  • ½ tsp chopped garlic
  • 1 cup chopped mushrooms
  • 1 tbsp dried red chili chopped
  • 1 tsp black pepper powder
  • Salt to taste
  • 1 cup chopped parsley
  • ½ cup chopped tomatoes
  • 1 tbsp lemon juice
  • 4 whole wheat pizza bases
  • Sliced spring onion to garnish
  • Black olives to garnish
Instructions
  1. In a pan, heat some olive oil. Now add the chopped onions, garlic, mushrooms & red chillis. Also add black pepper powder, salt, parsley & tomatoes. Mix well. Now add some lemon juice and let this mixture cook (on a medium flame) for some time.
  2. Once cooked, spread this mixture over rounds of whole wheat pizza bases. Garnish with green onions and olives.
