Peanut Butter Stew with Sweet Potato, Carrot and Green Beans

Ingredients
For the Vegetables
  • 2 large carrot (chopped)
  • 1 tsp extra virgin olive oil
  • 1 inch ginger (grated)
  • 5 oz green beans (chopped)
  • 1 large onion (chopped)
  • 1 large red bell pepper (diced)
  • 10 oz sweet potato (diced)
For the Stew
  • 2 cups carrot juice
  • 1 dash chili powder
  • 1⁄4 cup chunky peanut butter
  • 1 lime (juiced)
  • 1 tsp paprika powder
  • 1 tsp sea salt
  • 2 medium tomato (diced)
  • 1 tsp turmeric powder
For the Rice
  • 1 1⁄2 cups brown rice
  • 3 cups water
Instructions
  1. Use a big pot and boil the rice in the water until soft for about 30-40 minutes.
  2. Preheat the coconut oil in a big pot and saute the onion for about 5 minutes.
  3. Add the carrot, bell pepper, sweet potato, ginger and green beans and fry those for another 5 minutes as well.
  4. Add the rest of the ingredients for the stew to the pot and let it simmer on medium heat for about 30 minutes until the vegetables are soft.
  5. Adjust the taste of the stew and serve it with brown rice.
