Quinoa Salad with Mango, Sprouts, Nuts and Berries

Ingredients
For the Salad
  • 1⁄2 cup cooked kidney beans
  • 3 tbsps dried goji berries
  • 1 mango (diced)
  • 1 medium red bell pepper (sliced)
  • 3 1⁄2 oz salad greens
  • 1 3⁄4 oz seed sprouts
  • 1⁄2 cup sweet corn
  • 1 oz walnut halves (crushed)
For the quinoa
  • 1⁄2 cup quinoa
  • 1 cup water
Instructions
  1. Boil the quinoa in water until soft for 20 minutes.
  2. Mix the quinoa with the goji berries, kidney beans, sweet corn, walnut halves and the salad dressing.
  3. Put the salad greens, bean sprouts and bell pepper on a plate or a bowl and add the rest of the ingredients.
