Ingredients:
  • 1 small bundle of methi (fenugreek) chopped
  • 3 medium sized onions finely chopped
  • Oil
  • 3-4 crushed garlic cloves
  • 1/2 tsp turmeric powder
  • 1 tsp sugar
  • Coriander for garnish
  • 2-3 chopped green chillies
  • 1/4 tsp hing (asafoetida)
  • Salt according to taste
  • Grated coconut
Directions:
  1. Heat 2 tbsp oil
  2. Once the oil is hot, add 1/4 tsp asafoetida
  3. Add 3-4 crushed garlic cloves
  4. Add 1/2 tsp turmeric powder
  5. Add 3-4 chopped green chillies
  6. Add 3 medium sized onions finely chopped
  7. Mix and sauté everything together
  8. Once the onions are sautéed, add chopped fenugreek
  9. Stir well
  10. Now, add 1 tsp sugar
  11. Add salt according to taste
  12. Add 3 tbsp grated coconut
  13. Mix well
  14. Ready to serve

Notes:
TIP: To remove the bitterness, pluck the vegetable from the stem, chop it and then wash it in water TIP: The addition of coconut and sugar helps get rid off the bitterness in the vegetable
