Vegan Choco Chip Bars
Recipe type: Vegan
  • 2 tbsp coconut oil
  • 4 tbsp coconut milk or your favorite non-dairy milk
  • 1/4 cup Big Tree Farms coconut sugar
  • 1 tbsp pure vanilla extract
  • 1/4 tsp salt
  • 1 1/4 cup oat flour or finely ground oats
  • 1 1/4 cup almond flour
  • 1/4 cup Hemp Hearts
  • 1/2 cup mini vegan chocolate chips
  1. First, melt the coconut oil by heating it in a pan or microwaving it in a bowl.
  2. Next, stir in the coconut milk, coconut sugar and vanilla until the mixture is well combined.
  3. Then, add the salt, oat flour, almond flour and Hemp Hearts and mix.
  4. After that, fold in the chocolate chips.
  5. Press the dough into a parchment paper lined 8×8 pan and refrigerate until set.
  6. Cut into small bars and store in an airtight container in the fridge.
