Vegan Sushi with Avocado, Bell Pepper and Cucumber

Ingredients
For the Rice
  • 2 cups short-grain rice
  • 4 cups water
For the Sushi
  • 1 avocado (sliced)
  • 1⁄2 cucumber (sliced)
  • 8 sheets nori dried seaweed sheet
  • 1 small red bell pepper (sliced)
For the Dip
  • 8 tbsps soy sauce
  • 4 teaspoons wasabi
Instructions
  1. Boil the rice in the water until soft for about 30 minutes.
  2. Use a bamboo mat and put the seaweed on it and add half a cup rice and the vegetables.
  3. The bamboo mat makes it easy to create a nice sushi roll.
  4. Slice the sushi roll into pieces and serve with wasabi and soy sauce.
